hello and welcome back to you in the
kitchen with Matt I am your host Matt
Taylor today I have a special episode
for you for the first time ever I have a
guest I have my friend Kelly with us hi
so Kelly what are we gonna be making we
are gonna be making triple berry pie one
of my favorites
triple berry pie really easy to do very
few ingredients very simple ingredients
if we can make it you can make it let's
get started all right Kelly what do we
do first well first we're gonna preheat
the oven to 375 degrees awesome all
right so next what we want to do is
we're going to combine our dry
ingredients down below in the
description I will list all the amounts
we'll say them as well but the case you
forget you can look down below for all
the amounts alright so let's go ahead
you can meet this dirt or whisker or
whatever you want to call it excellent
so we go 1/2 cup of sugar now awesome
thing about pies is you don't have to be
exact with things if you want your pie
to be more sweet put more sugar in there
if you want to add something other than
white granulated sugar put brown sugar
in there totally up to you if you are
allergic exactly for example if you're
allergic to strawberries
don't use strawberries use raspberries
if you want to have more than three
berries throw a bunch more berries in
there totally up to you
alright so 1/2 cup of sugar 3
tablespoons of cornstarch oops
and we're also going to ask add some
spices we got some cinnamon fourth of a
teaspoon and then we got some nutmeg
another fourth of a teaspoon I find a
lot of recipes don't call for the extra
spices in the triple berry pie but I add
the extra extra zing now what do we do
now we will add the berries we'll add
all the berries the blueberries this is
one and a half cups of blueberries
blackberries two cups of blackberries
and one cup of sliced strawberries and
you can slice the strawberries up
whatever size that you want mix it so it
looks like this ready to go alright
that's some hear my voice squeak all
right all right so all right so next the
set the berries aside now on to our our
dough or crust so Kelly made this ahead
of time what you can do is you can buy
premade dough from the store if you want
or make it from scratch I decided not to
show you how to make it from scratch
because I already have a video my apple
pie video where I make a really good a
flaky crust dough from scratch so you
can watch that I'll put a link down
below where you can watch it also at the
end of this video you'll see a link to
that all right so what do we want to do
add a little bit of flour go ahead so
I'm teaching Kelly the ways of cooking
and baking sitting down it is a skill
especially when you have long arms and
sitting by seven yeah all right so how
how big of a circumference or well this
is a 9 inch high 10 so we're gonna have
to be about 10 inch circumference right
yep now to check it what you can do is
put it like this and we know we want to
go a little bit more this way and this
way but that's looking really good
thank you Matt you're welcome Kelly that
is good looking you at Hollywood yeah
all right cool little trick oh yeah roll
it and it's okay if your dough like
falls apart on you because you can just
smush together inside the pan just so
happy rolls out so nice that's actually
that cool pretty awesome and I wish I
invented it myself
I do not something we'll just take our
fingers like this and we'll just push it
down in there that's out sure you can
help if you want I mean if you're not
helping what's good to me are you want
me to do all the work exactly
she's just here to make me look good all
right so there you go it doesn't have to
be super special because the cool part
is what's gonna be on top all right so
now what we want to do is
hi Hey look little beautiful berries
okay all right let's do it I got this
here I'll hold it and you scoop oh yeah
yeah all right beautiful look good do we
need to add more on top or no I think
that's good because for the lattice when
I do the lattice I don't like it super
clumpy so they'll just okay that's
awesome so what we're talking about at
this stage depending on how you want
your pie if you want your pie mounded
mound it um just grab some more berries
and you don't have to worry about any
more sugar or anything like that add
some more berries and just put them on
top until you get a mound that you want
now when this bakes it'll go down a
little bit but that's okay the
cornstarch will help to soak up the
liquids and make it so it's not super
runny some people also like to add like
a couple tablespoons of flour you can do
that too if you wish all right perfect
now let's set this aside and when did
you let Kelly work her magic this is
something I'm not a master at yet yet is
doing lattice work normally I just roll
out the top put it on top
fork it all around boom call it get but
we're need something different all right
so what we do for this all right we're
just gonna roll it up like she did and I
usually will use a lot more for the top
because we're gonna be doing some fancy
stuff sees need some extra dough fancy
fancy here I guess we can put the butter
on - yeah let me do that so I'm gonna
well she's doing that I'm gonna move
this back over here and we want to put
our fourth cup of butter
normally I won't touch it like this as
much my hands are clean but I'll just
take a knife and shave
in there but you want to add the butter
I guess you could leave it out but don't
it makes everything better
really it's like bacon makes everything
better
alright so just scatter the butter on
like that I even I didn't bring my match
but there's a matte haha I got my man
right here um but it has like the
circumference oh yeah inches on it too
but it was like maybe I was a little too
fancy nothing for my shirt
no that's true but you know like not
everyone's gonna have that's sure not
everyone's gonna happen so what do you
think is the ideal thickness of an inch
yeah now what we do
she's got all kinds of tools here don't
matter ruler even yeah she's pulling out
the big guns we're not messing around
here we've got these little doodads I
know this is pizza roller I get the
fondant cookie cutters oh yes they're
great you got this little women's push
it little things like these little
flowers okay so I use lots of rulers
okay and I'm thinking for this we could
do like one inch by one inch okay
so why are you why you're doing that you
want me to cut out stuff yeah please do
have fun look the little flowers I'm
gonna have fun with the little flowers I
feel like after today with this show
you're gonna be using a long time like
that yeah perfect perfect man perfect
all right how many strips we have 2 4 6
8 9 8 10 10 strips we need so she's just
putting doing little knife veins in
there pretty cool so obviously this part
takes a lot of time so you may or may
not want to do all of this effort but it
will look really cool when it's done
it'll be worth alright so what we did as
you saw we have a bunch of strips we
have ten of them and then we have a
bunch of little cutouts all for the
decorating purposes and now Kelly let's
work your magic lattice it up
yes it's already looking nicer than what
I could do she really doesn't like it
when they tear so over under over wait
yes okay we're good
it trips me up a little bit so beautiful
beautiful
so then sometimes I like to hide the
edges with the little cutouts cuz yeah
do we need to trim it yes let's trim
let's trim what do you you just use a
knife to trim I don't mean just use a
knife and Matt did a really good job
with these little cutouts
by the way nicely done thank you I'm
good at cutting out flowers and if you
wanted to make hand pies you know if
you've watched my hand pie recipe or
video you can make a triple berry hand
pie if you want which we'll probably do
with this extra do now we're gonna
beautify it by laying down two hours and
leaves and such very girly very very
girly
nicely done how does this fill with the
cutouts your first lattice is this your
first lattice this is my first lattice
work I think about this I'm feeling like
it's pretty easy I mean Kelly can do it
okay that's that you can do it anyone
that is the hole it's a compliment I
mean I'm going to do it's all about how
you say yeah I think the cadence and how
you're speaking to me I didn't sound
very flattering oh I like the way that
you cut this now nicely done
at least I give you compliments that are
sincere okay you look very nice today
thank you
yeah see and it's so nice with these cuz
if you've messed up do you just cover it
with a leaf alright so here we go our
beautiful pie thank you thank you see
you well yeah I mean I am very skilled
with punching out flowers you know I
mean so you can be or you can decorate
this however you like we went pretty
crazy took us about 30 minutes to
decorate the top so just be as artistic
as you want so to bacon what do we do
okay so we're just gonna put this I
usually put it in a cookie sheet and
then I'll put the tin foil on the top so
kiss the pie crust on the top usually
I'll get it done before the inside so we
need to cover it up for at least a good
most of the time that it's
Evon okay and we're gonna start with an
hour and then check it after an hour so
how do we tell when it's done
I mean all of the insights are gonna be
bubbling and it's gonna not just
sometimes you can have it just bubble on
the outside that doesn't mean it's done
and us you have to see bubbling on
inside completely and that's usually
when I'll take the tinfoil off and give
it a few minutes to cook the doctorly
awesome so we'll go on to that step and
we'll come back when this awesome pie is
baked all right so here we go this is
what it looks like when it comes out of
the oven quite amazing and you can see
why we did the baking sheet underneath
it did have a little bit of run äj--
which is to be expected but it looks
awesome
that's better that than the bottom of
your oven absolutely now this did wind
up taking actually about an hour and 40
minutes a lot of recipes will say an
hour but a lot of times it takes longer
so remember what to look for okay the
bubbling in the middle outside okay but
you're gonna get doughy middle so make
sure it's bubbling in the center
bubbling in the center also we took off
the aluminum foil we took it off about
20 minutes to go at the end it looks
fantastic it smells fantastic now this
is gonna take a long time to cool down
you do want to let it cool down to room
temperature we serve before serving it
so we are not gonna dive in it to it
tonight
Kelly's had a long day she needs to go
